4 Yellowfin Tuna Steaks,
2 Cloves Garlic.
For the Sauce:
15ml Soya Sauce,
15ml Lime Juice.
For the Salad:
Sweet Pickled Chilli Peppers, finely sliced,
2 Spring Onions, chopped,
Mixed Salad Leaves,
4 Asparagus Spears, peeled into slices,
Fresh Coriander Leaves,
Brush tuna with oil and press into sesame seeds. Add oil to pan and heat, fry off whole garlic cloves until well browned. Set aside cloves and retain oil in pan.
Fry Tuna in garlic oil for 1-2 minutes per side until lightly browned. Set aside to rest.
Mix sauce ingredients and add 15ml of the garlic oil, plus any toasted sesame seeds left in the pan.
Lay out salad ingredients adding finely sliced browned garlic cloves. Rest sliced Tuna on top and dress with sauce.
The biggest surprise of this dish was the difference in flavour created by browning the garlic before slicing. Gin and soy pair well! Will add some ginger next time.
